Chocolate Chip Cookie Ice Cream Sandwich

Need an easy recipe for a dessert?  This concoction can be made and frozen for an after-dinner treat, or an afternoon snack!

Ingredients:

  1. 2 1/2 cups of unbleached all-purpose flour
  2. 1 teaspoon of baking soda
  3. 1 teaspoon of salt
  4. 3/4 cup of granulated sugar
  5. 3/4 cup of light brown sugar
  6. 2 eggs
  7. 2 sticks of room-temperature butter
  8. 1 teaspoon of vanilla extract
  9. 1 package of semi-sweet chocolate chips
  10. Carton of vanilla bean ice cream
  11. 1 package of chocolate Almond Bark
  12. Coarse sea-salt

Directions: 

  1. Pre-heat oven to 375 degrees Celsius
  2. Mix together flour, baking soda, and salt (I use a Kitchen Aid Mixer, but any mixer will do)
  3. Add sugars into mixer
  4. Beat in eggs, butter, and vanilla
  5. Mix in chocolate chips
  6. Using a nonstick cookie sheet, spoon 1 in. balls of cookie dough onto the sheet and bake for 12-14 minutes. (I use a Pampered Chef stone cookie sheet)
  7. Let cookies cool on cooling rack
  8. Empty sections of chocolate almond bark into a microwave safe bowl (I use a ceramic Corningware dish)
  9. Microwave chocolate for 1 minute, then stir completely
  10. Repeat and put chocolate back into microwave for 15 second intervals, stirring in-between, until completely melted
  11. Choose cookies of similar size, and sandwich 1 scoop of ice cream in-between the cookies
  12. Dip the ice-cream cookie sandwich into chocolate almond bark, spooning chocolate over about half of the cookie sandwich
  13. Set chocolate covered cookie ice cream sandwich onto a section of tinfoil and quickly sprinkle with coarse sea-salt
  14. Wrap the finished ice cream cookie sandwich in the tinfoil and store in the freezer
